A cross disciplinary group of SETU students from the Higher Certificate in Business in Hospitality, the Higher Certificate in Business in Tourism, the Higher Certificate in Business in Culinary and the BA (Hons) in Marketing and Digital Media were invited by Sara Dolan, Commercial Director for Waterford Treasures and Mount Congreve Gardens to come to the magnificent gardens for a field trip earlier this semester.
The theme of the visit was ‘Green, Social and Digital’ reflecting the contemporary interlocking strands of environmental sustainability, social contribution, and digital learning and communication so embedded in Mount Congreve Gardens and Waterford Treasures and in the learning of students on these programmes.
According to Dr Anthony Foley, lecturer in SETU, “Waterford Treasures and the magnificent Mount Congreve Gardens are such important world class destinations, which add so much to the distinctive heritage and ecological character of Waterford.
Speaking about both locations, Jacinta Greene Beatty said, “We are so very fortunate to have both on our doorstep as they are a rich resource for live case studies for our students at SETU.”
The themes of ‘Green, Social and Digital’ were continued into a follow-on workshop at the ‘Seasons’ training restaurant at SETU attended by all the students, along with lecturers Jacinta Greene Beatty, Dr Anthony Foley and Noeleen Dooley.
The sustainable theme so central to Mount Congreve was led by Jacinta Green Beatty and presented by Cerrie Field, a first year student of the Higher Certificate in Business in Tourism.
Insights into a typical visitor purchase journey by culturally curious customers, with the associated digital touch points and creative narratives, was led by Dr Anthony Foley.
The social dimension was integrated into the workshop with some wonderful culinary delights prepared by the culinary class, and lots of fun with board games which were kindly sponsored by Cartamundi Ireland Ltd.
